Ceylon cinnamon is also known by several other names such as True cinnamon and Cinnamomum zeylanicum. It comes from Sri Lanka and is an evergreen plant. It is so-called because Sri Lanka used to be called Ceylon.

Ceylon cinnamon (Cinnamomum Verum) is a type of cinnamon that comes from the bark of an evergreen tree. Sri Lanka provides about 80% of the world’s supply.

The oils found in Ceylon cinnamon are thought to reduce spasms, reduce gas, and fight bacteria and fungi. Chemicals in Ceylon cinnamon might also work like insulin to lower blood sugar. But these effects are thought to be fairly weak.

People use Ceylon cinnamon for diabetes, indigestion, diarrhea, obesity, and many other conditions, but there is no good scientific evidence to support these uses.

Don’t confuse Ceylon cinnamon with other types of cinnamon, including Cassia cinnamon, Padang cassia, Indian cassia, or Saigon cinnamon. These are not the same.

Recipes and Preparing Instructions

Churro – Cinnamon Twists
Ingredients- For Churro – Cinnamon Twists

1 pound fresh pizza dough, store-bought
1/2 cup sugar
2 teaspoons Cinnamon(Pure Ceylon Items)
1/4 cup unsalted butter, melted
Directions
Preheat oven to 375°F. Roll, press, and stretch the dough into an 8-by-10-inch rectangle. Starting along the short edge and using a sharp knife, slice the dough into eight 3/4-inch-wide lengths.
Whisk together the sugar and cinnamon in a shallow dish. Brush all sides with melted butter and roll in cinnamon sugar. Twist the ends in opposite directions, and then transfer to a greased or parchment-lined baking sheet.
Let’s rest for 10 minutes. Bake 18 to 20 minutes.

Ingredients – For Cinnamon Bread
2 1-pound packages of refrigerated pizza dough
1 tablespoon cinnamon
1 cup sugar
8 tablespoons (1 stick) butter, melted, plus more for the pan
Directions
Heat oven to 375° F.
Tear off small bits of the dough and roll them into 1- to 1 1/2-inch ball. Place the balls on a plate.
Combine the cinnamon and sugar in a bowl. Dip each ball in the butter, then in the cinnamon sugar. Transfer the balls to a buttered Bunt pan.
Drizzle any remaining butter over the top and sprinkle with any remaining cinnamon sugar. Bake until golden brown, about 40 minutes. Remove from oven and let cool for 5 minutes. Place a plate on top of the pan and carefully flip it over. Tap the bottom to release the bread.
Transfer to a plate and let people pull the bread apart with their fingers.

Cinnamon tea Recipes
1. Lemon and cinnamon tea
Ingredients
1. 4 dl water
2. 4 cloves
3. 2 cinnamon sticks
4. 2 bags of tea (Earl Grey is fine)
5. 3-4 tbsp lemon juice
6. 1-2 tbsp brown sugar
7. Slices of lemon for decoration if you like
Directions
1. Start by adding water, cloves, and cinnamon to a pot and bring to a boil. Pull it off the heat, and add the teabags. Leave to infuse for five minutes.
2. Remove the bags, and add lemon and sugar. Start by just a little, and add more as you taste. Put the pot back on the stove, but on low heat. It’s important that it doesn’t boil, just steep.
3. Once it’s hot enough, pour it into a cup. You can strain it if you want to, so you don’t get the cloves and lemon pits in the cup, but if you’re not too bothered you can just pour it straight in.
2. Sudanese Cinnamon Tea
Ingredients
3 cinnamon sticks
3 cups water
1 Tbsp black tea (I used Ceylon)
sugar cubes, as desired
Method
For the strongest flavor, consider adding the cinnamon sticks to the water as it heats up. Otherwise, add it to a teapot with the black tea. Pour hot water over top, steep a few minutes, then pour into serving cups.
